We have 2 main challenges in each project we are managing in the field of sugar reduction:
1. How to reduce 30-50% of sugar in any product and meet the stay in sweetness parity.
2. What kind of bulking agents to add to the product in order to replace the reduced sugar.
For the first challenge, it is pretty easy for us, and this is exactly our IP. For the second challenge- we are still in our learning curve.
As for now, we are using many kinds of nutritional fibers, and sometimes some starches. Your mission will be the obtain a deep study of the different fibers and other bulking agents we are using in terms of:
1. What should be the beneficial effect of consuming those fibers on different populations (adults, kids).
2. What are the recommendations? RDA?
3. What is the relevant regulation- EU and US.
4. The GI effect of combing fibers and sugars.
5. Deep learning of the deferent fibers we are using, and establish a knowledge based recommendations of how to maximize the health impact of sugar reduction in any given product.
6. Explore new bulking agents (such as proteins).
7. Better understand the GI and other aspects of using starches as a bulking agent.
8. Any other matter that will be discovered during the research and would be interesting to deep dive.

Israel Story’s internship program is a vital part of our team’s operations.
Internship cohorts consist of 1 to 3 people, and interns participate in every stage of the production process, from pitching, researching, and reporting stories, to editing, uploading, and publicizing them. In addition to production tasks, interns are also assigned to work with our producers on various institutional tasks like answering team emails, running social media accounts, and editing our website. Israel Story prides itself on being a meritocracy, so good ideas are pursued, regardless of where they come from, and interns are encouraged to speak up, get involved, and pursue ideas about which they are passionate.
The position is based in Jerusalem, but we are also open to interns living in Tel Aviv, as long as they are willing to come to our Jerusalem offices 3 days a week. Regardless of location, however, this isn’t a full-time office job: you’ll also get to explore the country as you help us find and tell the stories of Israel’s most interesting characters.
Israel Story interns are self-starters and have the opportunity to be involved in every step of podcast production. Through the training they receive at our show, they leave the internship prepared to produce high-quality audio content, and engage in storytelling that challenges the boundaries of traditional genres. Israel Story internship alumni have gone on to hold positions at This American Life, The New York Times, Pineapple Street Media, and Harvard’s Neiman Fellowship, among others.
Positions require a 6-month commitment, which could lead to a longer-term, paid job. The position is unpaid, but transportation is covered.
Candidates with experience in audio production, storytelling, journalism, multimedia production, musical production, scoring, production logistics, and/or social media are strongly encouraged to apply.
